Cold Pasta Salad Recipes

Cold pasta salad recipes can be a refreshing meal and can be made with whatever pasta you happen to have on hand. You could add pasta to pretty much any salad you like. Some cold pasta salad recipes use conchiglie (little shells) and some use egg noodles, but you can use the pasta you like to make your salad.

Pasta Salad with Cheese and Walnuts

Ingredients

  • 2 cups of dried conchiglie pasta
  • 1 cup of shelled walnuts
  • 1 bag of mixed greens salad (a nice radicchio, escarole, arugula, mache, and frisee mix works well)
  • 2 cups of Dolcelatte cheese, a sweet blue cheese (Roquefort works if you can't find Dolcelatte)

Dressing

  • 2 tablespoons of walnut oil
  • 4 tablespoons of extra virgin olive oil
  • 2 tablespoons or red wine vinegar
  • Salt and pepper to taste

Instructions

  1. Cook the pasta until done.
  2. Rinse the pasta well.
  3. Let the pasta cool in your refrigerator.
  4. Toast the walnuts in your oven at 350 degrees for five minutes.
  5. Let the walnuts cool.
  6. Whisk together the oils and vinegar in a bowl.
  7. Add salt and pepper to taste.
  8. Arrange the greens in a large bowl.
  9. Scatter the pasta over the greens.
  10. Toss the toasted walnuts over the pasta.
  11. Drizzle the dressing over the salad.

Egg Noodle Salad

Cold pasta salad recipes can use Asian noodles and flavors like this one.

Ingredients

  • 8 ounces of dried egg noodles
  • 2 teaspoons sesame oil
  • 1 carrot
  • 2 cups of bean sprouts
  • ½ a cucumber
  • 2 scallions, chopped finely on a bias
  • 5-6 ounces of chicken or turkey breast, cooked and sliced into thin strips

Dressing

  • 5 tablespoons of coconut milk
  • 3 tablespoons of lime juice
  • 1 tablespoon of soy sauce
  • 2 teaspoons of Thai fish sauce
  • 1 teaspoon of chili oil
  • 1 teaspoon of sugar
  • 2 tablespoons of fresh cilantro chopped fine
  • 2 tablespoons of fresh basil chopped fine

Garnish

  • Peanuts
  • Basil sliced into chiffonade

Instructions

  1. Cook the noodles according to the package directions.
  2. Rinse in cold water.
  3. Toss the noodles with sesame oil.
  4. Using a vegetable peeler, shave the carrot into thin ribbons.
  5. Blanch the carrot ribbons and the bean sprouts in boiling water.
  6. Shock the beans and carrots in ice water.
  7. Drain the bean sprouts and carrots well.
  8. Using the vegetable peeler, shave thin ribbons of the cucumber.
  9. Place the bean sprouts, carrots, cucumbers, scallions, and turkey in a large bowl.
  10. Add the noodles to the bowl and toss to mix.
  11. Mix together all the dressing ingredients.
  12. Drizzle the dressing over the salad.
  13. Garnish the salad with the peanuts and basil.

Add a Little Spice to Your Salad

I like to use fusilli for this salad. Fusilli is spiral-shaped pasta that can be found in rainbow colors, which will add a colorful touch to your salad.

Ingredients

  • 2 red bell peppers, cut in half and deseeded
  • 1 small fresh red chili
  • 4 tomatoes, halved
  • 2 garlic cloves
  • ½ cup of ground almonds
  • 7 tablespoons of extra virgin olive oil
  • 1 pound 8 ounces of fusilli pasta

Instructions

  1. Cook the fusilli according to the package directions.
  2. Drain and rinse the pasta with cold water.
  3. Let the pasta cool in the refrigerator.
  4. Preheat your broiler to a medium heat.
  5. Place the chili, tomato halves, and bell peppers skin side up on a cookie sheet.
  6. Place the cookie sheet into the broiler and cook until the skins are well-charred, turning occasionally.
  7. Once the peppers are charred, place them in a bowl and cover with plastic wrap.
  8. Let sit for ten minutes.
  9. Peel the skin from the peppers and slice the flesh into strips.
  10. Peel and deseed the tomatoes.
  11. Peel the garlic.
  12. Place the ground almonds on the cookie sheet and toast in the broiler for about three minutes until golden brown.
  13. Using a food processor, blend the bell peppers, chili, garlic, and tomatoes until pureed.
  14. While the food processor is still running, slowly drizzle the oil through the feeder tube to form an emulsion.
  15. Place the mixture into a saucepan and fold the almonds into the mixture.
  16. Warm the sauce until it is thoroughly warmed.
  17. Place the cooled pasta in a serving bowl.
  18. Pour the sauce over the pasta.

Tuna Pasta Salad

This creamy pasta salad can serve as a side dish, but it also makes a great main dish for lunch.

Ingredients

  • 1 and 1/2 cups corkscrew pasta
  • 10 ounces frozen peas, thawed
  • 1 and 1/2 cups chopped carrots
  • 1/4 cup finely chopped onion
  • 1 small can tuna, drained
  • 2/3 cup mayonnaise
  • 2 tablespoons lemon juice
  • 2 teaspoons sugar
  • 1 teaspoon dill weed
  • 1 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Boil pasta according to package directions; rinse with cold water and drain pasta well.
  2. Thaw peas completely; drain well.
  3. Combine cooled pasta, peas, carrots, onion and tuna in a large bowl; mix well.
  4. Combine mayonnaise, lemon juice, sugar, dill weed, salt and pepper in a smaller bowl; blend well.
  5. Pour mayonnaise dressing over macaroni mixture; toss lightly.
  6. Refrigerate for 2 hours or until thoroughly chilled.
  7. Sprinkle with paprika, if desired, and serve on lettuce leaves.
