Twice Baked Potato Casserole

This recipe is a great way to use up left-over baked potatoes, although you can bake potatoes just for the purpose of preparing this delicious dish.

Ingredients

  • 8 medium-sized microwave cooked or oven baked potatoes
  • 1 pound bacon
  • 2 cups shredded cheddar cheese (mild, medium, sharp, or extra-sharp)
  • 2 cups sour cream (not fat-free)
  • 2 green onions

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Cook the bacon in a pan, oven, or microwave; drain and break into small chunks.
  3. Cut the potatoes into approximately one-inch chunks and place them in a bowl. It does not matter if the potatoes are cut warm or cold. You can leave the skins on or peel them prior to cutting - whichever you prefer.
  4. Slice the green onions and place them into the bowl.
  5. Add the sour cream to the bowl.
  6. Set aside approximately one-quarter of the bacon and cheese; add the rest to the bowl.
  7. Stir gently to combine. It is fine if the potatoes crumble or smoosh a bit, but you don't want to stir so hard that you end up with the consistency of mashed potatoes.
  8. Spoon into a 13" by 9" casserole dish that has been coated with nonstick cooking spray and spread mixture evenly in pan.
  9. Sprinkle remaining cheese and bacon across the top of the mixture.
  10. Bake for 30 minutes.
